Seasonal Cuisine

Kumamoto's bounty,told through every plate.

"Matsuya Honkan's cuisine" begins with knowing the gifts of this land.
Carefully grown vegetables and rice, the bounty of the Amakusa sea, Kumamoto's celebrated Aka-ushi beef and basashi —
we craft the robust flavors of the land, available only in their season, into each dish with care.

Delight for the eyes, aroma for the senses, taste on the palate.
Food is the very memory of a journey.
May Matsuya Honkan's cuisine leave a lasting impression on your heart.

Kumamoto's celebrated specialtiesKumamoto Specialties

"Aka-ushi" beef raised on the great grasslands of Aso, exceptionally fresh "basashi" (horse sashimi), "basa-yaki" (grilled horse meat), and Kumamoto's regional dishes "karashi renkon" (mustard-stuffed lotus root) and "ichimonji no guruguru" —
we've woven these local specialties, worth tasting only on a trip to Kumamoto, into our courses, with options to suit any budget.
